Hot Espresso (and to an extent, Hot Coffee) will become increasingly bitter when poured over ice. Cold Brew is brewed cold to begin with, so there is no sudden temperature change to prompt the reaction that makes coffee bitter. I love hot lattes made with espresso, but I always make iced coffee drinks with Cold Brew to ensure smoothness without a bitter taste.
@nobile There are a lot of oils in cold brew, that’s likely the sensation you’re feeling. When you filter through paper (or cloth) many of those fall out. Metal, not so much

I use a metal screen in my areopress when doing cold brew for that reason. But the majority of the year I don’t care. Just give me the grocery store caffeine I need to get through the day
Granted I grew up in the age of church and office percolators so Dad took it with cream and sugar. Those were designed for producing a stimulant but it’s one of those tastes you adapt too
I would absolutely cold brew if you want it in a cold drink not ice hot coffee. Regardless of the quality of coffee.
But also some people over the years have brought interesting coffees and if you want to Budget/splurg8i have no issues.

Espresso shot chilled in freezer for a bit. Add vodka and a little coffee liquor. A few pieces of ice into shaker. Get violent for a few moments with shaker. So there is a bit of foam stirred up. Then strain into martini glass.

Add ice to Americano is fine, but generally speaking I like my coffee as black as my soul
